The new angular analysis of the decay $B \to K^* \ell^+ \ell^-$ recently presented by the LHCb Collaboration still indicates some tensions with the Standard Model predictions. There are several ongoing analyses to solve the problem of separating hadronic and New Physics effects in this decay, but the significance of the observed tensions in the angular observables in $B \to K^* \mu^+\mu^-$ is still dependent on a theory guesstimate of the hadronic contributions to these decays. We present a systematic investigation of jet production at hadron colliders from a phenomenological point of view, with the dual aim of providing a validation of theoretical calculations and guidance to future determinations of parton distributions (PDFs). We account for all available inclusive jet and dijet production measurements from ATLAS and CMS at 7 and 8 TeV by including them in a global PDF determination, and comparing to theoretical predictions at NNLO QCD supplemented by electroweak (EW) corrections. We evaluate abundance anomalies generated in patches of the universe where the baryon-to-photon ratio was locally enhanced by possibly many orders of magnitude in the range $\eta = 10^{-10} - 10^{-1}$. We extract the heavy-quark diffusion coefficient \kappa and the resulting momentum broadening <p^2> in a far-from-equilibrium non-Abelian plasma. We find several features in the time dependence of the momentum broadening: a short initial rapid growth of <p^2>, followed by linear growth with time due to Langevin-type dynamics and damped oscillations around this growth at the plasmon frequency.
